Last week was another uninspired cooking week (except for my Curry Turkey Meatballs) due to it being full of celebrations! B’s birthday was on Monday and then our 3 year wedding anniversary was on Wednesday. This obviously required fun dinners out! What better way to celebrate your anniversary than with cocktails and cupcakes?!

Time to get back in to gear and make some healthy meals this week leading up to The Twilight Zone Tower of Terror 10-Miler next Saturday. Here’s what was in my basket this week to help with that…

I’m psyched about the broccoli. It’s so good simply roasted! I still have some bok choy and scallions leftover, so I think I’ll do a nice chicken stir fry and add in the peppers, maybe with a coconut lime sauce. I’m loving coconut milk lately! Broccoli rabe still isn’t my favorite, but bacon and garlic always make it better 🙂 Or maybe some sausage and peppers with the broccoli rabe added in. Descisions…

CSA Saturday will be on a hiatus next week since I will be in Disney. Only 2 weeks left after that! 🙁
My fave thing to do with broccoli rabe is to cook it down in a pan with a bit of oil, loads of minced garlic and some crumbled hot Italian sausage, then I add that mixture to pasta! It is a very satisfying dish, especially if I’ve gone on a long run that day.
That’s funny…I actually went out and bought sweet italian sausage with that dish in mind! Well minus the pasta 🙂
