CSA Saturday: Week 8

Well it has been a great week of meals from the farm!  I really dove into last week’s basket and got a little creative.

Last week I mentioned that I was going to try some peanutty noodles with the bok choy I had.  I wasn’t in a noodle mood, so I found this recipe for stir fry with peanut sauce over rice and it was really good!  I used chicken, bok choy, red bell pepper, onions and carrots in the stir fry and added some red chili flakes to the sauce for heat.  I also added some lime juice for a little tang because peanut sauces can be a little heavy, then served everything over short grain brown rice.  It was really good, but only if you’re a peanut fan.  Barry didn’t even go near it…more for me!  Sadly, I was so hungry that I forgot to take a picture.

Next up, a Quinoa, Corn and Mint Salad!  I found this recipe on Pinterest (follow my boards!) this week and had to make it.  It was so good that I literally did a happy food dance when I tasted it!  The salad has a lemon vinaigrette that is so fresh and summery, and is the perfect complement to the corn and herbs.  I used chives instead of scallions because that was what is in my garden, but I’m glad I did because the onion flavor was much milder.  I served this with spice rubbed grilled chicken and some sliced avocado…YUM!  Try this recipe..NOW!

And the last dish I’ll share is a succotash of fava beans, corn and carrots from my garden.  This was very tedious to make since there was a lot of veggie prep, but it was totally worth it.  I mixed in some chopped thyme and oregano from my garden as well to brighten it up a bit.  It was a great side for some BBQ chicken.

Let’s move on to this week’s basket, shall we?  Once again, I received MORE than five items!  Granted half of the items I can’t eat, but I got more corn, some beautiful beets, carrots and broccoli rabe…woohoo!

I haven’t made pizza in a while, so maybe a chicken sausage and broccoli rabe pizza for dinner tonight.  The corn looks much better this week (last week’s was a bit small), so I’ll probably just eat it right off the cob…sweet and delicious.  And for the beets and carrots, roasted as usual…my favorite preparation.

I picked up some tomatoes from the farm, the first of the season!  They’re small, but I’ll take them.  I also grabbed more of the local mozz which will go well on my pizza and just plain with the tomaters.  Oh man do I love summer!
