Last night I wasn’t sure what to make for dinner. I wanted something comforting, but easy to make. After searching the kitchen, I found a leftover chicken breast, plum tomatoes, broccoli from my CSA, Israeli couscous and Parmesan cheese. That’s pretty simple and healthy as a bonus!
I cut the tomatoes in half and let them roast for in the oven for about 45 minutes to bring out the flavor and help create a sauce. While the tomatoes were cooking, I blanched the broccoli and chopped that up with the chicken breast.
I cooked the couscous and added it to the chicken and broccoli mixture. Once the tomatoes were roasted, I chopped them and added them to the bowl with all of their juices.
I tossed everything together, added about 1/4 cup of Parmesan and viola…dinner! This was a super simple and very flavorful meal. It’s also very healthy and would be great for a post-run lunch. Thankfully there are a lot of leftovers, so I might do just that after my weekend run!
