RAD Recap for August 31, 2014

I want to start by congratulating everyone who ran one of the races over Disneyland Half Marathon Weekend!!  I’ve had a blast following along and have some great guest recaps coming up in the next few weeks, including one from Jenny who completed her first half marathon and runDisney race…CONGRATS!!

I’ve spent the past week with my favorite people at one of my favorite places, Disney’s Vero Beach Resort.  It was relaxing, fun and full of laughs.  This is a trip I look forward every year and I am so lucky to get to spend this quality time with my friends…I hope there will always be Days Like This 🙂

Before heading home, B and I spent a night in Walt Disney World at Bay Lake Tower.  If you follow me on Instagram, you will have seen all of the fun I had in the Magic Kingdom for a few short hours, followed by dinner at California Grill and Wishes! from the Top of the World.  What a great day!

After we returned to Connecticut yesterday afternoon, we stopped by the grand opening of Black Hog Brewing Co. before heading home.  Our friends from Caseus in New Haven started this awesome brewery that focuses on craft beer using local ingredients.  My favorite was Granola Brown…YUM!

Hard to believe that this weekend is the unofficial end of summer, but there are a lot of fun events coming up in the fall.  runDisney races, the Disney Fit Challenge, Epcot International Food & Wine Festival just to name a few!  Oh boy!  What are you most excited about?

RAD Recap for June 8, 2014

I can’t even begin to explain how happy I am that the summer is finally here and that it is warm outside!  I have been in such a great mood and I even went to the gym 5 days this week!  Who am I?!?!  It’s so amazing how the weather can have a big effect on your overall wellbeing.  I’m seriously thinking it’s time to move to warmer climates…I’m not built for this winter business!

Things have been kind of quiet over here on RAD this week because 1. I think runDisney has exhausted their BIG new for a few weeks and 2. I’ve had a TON of things going on outside of my Disney life…shocking, I know.  But it’s all pretty fun, so you should check it out…

First up were some food adventures!  I shared a recipe for some delicious and nutritious Juice Pulp Meatballs that you must try.  I know it sounds gross, but stick with me on this one.

Next, my CSA started this week (remember CSA Saturdays here 2 years ago?!?) and I got some amazing local veggies to try out!

Everything else was CrossFit related…again, shocking!  Last weekend I spent 3 days in CrossFit heaven at the Northeast Regional competition.  That Friday, I was invited by Reebok to tour their facility, meet with some very inspirational athletes and test out some of their products.  It was a dream come true!

So that has been my life outside of Running at Disney, but there as also be some rad stuff going on over here!  Katie shared her transformation story with us and Danielle returned with some great ways to Love Thy Feet!

Coming up this week I have another great transformation story, information on the Star Wars Half Marathon Weekend registration, an all new Kill, Marry, Refurb segment, and John is back with more Anaheim Antics!

RAD Recap for May 25, 2014

Happy Memorial Day!  I can’t believe the summer is actually here…it’s so nice to finally have some warm weather.  I just love spring and summer here in New England.  My favorite thing (besides not having to wear shoes) is that local veggies are starting to come into season.  I signed up for the CSA at my local farm again this year and can’t wait for that to start.  But until then, I’m filling up on their asparagus!

So the big runDisney news/rumor this week came from a cast member at Disneyland Paris who posted a photo of a button he received after a cast member fun run that said to “Get Ready!” for the 1st Disneyland Paris Half Marathon in September 2015.  Since he posted those photos on Thursday, they have been taken down.  I’m assuming this was something that was not meant to be leaked since there hasn’t been any official word from runDisney.  I’ve also heard rumors about a Star Wars race coming, so hopefully there will be some big announcements coming soon.

In case you missed some of the other fun goings on this week, Cindy stopped by to share her story for Transformation Tuesday, I recapped my visit to the New York World’s Fair Anniversary (you know, where Carousel of Progress debuted!), and Jessica talked about running with Team Challenge for her family.  If you’re new to this blog, I suffer from Ulcerative Colits and Team Challenge is the endurance training team and fundraising program benefiting the Crohn’s and Colitis Foundation of America.  I ran with them in 2012 and it was an amazing experience.  You can read about it here.

Later this week, I am heading up to Canton, MA to support the team from my gym, CrossFit Milford, and a few other local athletes competing in the Northeast Regionals of the CrossFit Games.  It is such a fun event! I had a blast last year and can’t wait for a weekend getaway with my girls!  You can follow all the shenanigans on my Instagram 🙂

Also coming up this week, Ilene will be sharing her story for Transformation Tuesday and I’m thinking of taking a trip out west this week…maybe to visit my favorite lounge that I’ve been missing lately.

Friday Feast: Kendron Valley Inn

For this long holiday weekend, B and I decided we needed a getaway.  Something close to home, but out of our ordinary routine (aka Disney).  So we decided on a few days in Vermont to check out a few farms on the VT Cheese Trail, eat some great food, RELAX and best of all…play with goats.  More to come on that later 🙂

KVIWe drove up to VT after both taking a half day at work and arrived at the Kendron Valley Inn around 6pm.  OMG this place is so super cute!  More on the hotel later…right now I want to highlight the wonderful dinner we just had!

The restaurant has a dining room and a tavern both serving the same menu.  We decided to go with the more informal tavern for dinner and I’m so glad we did.  It was cozy and perfect!

KVI_TavernCocktails were ordered and we quickly looked over the menu.  A great thing about this restaurant is that they are part of the Vermont Fresh Network, which connects farms and food producers with chefs to provide the freshest food and support local agriculture.  Right up my alley!  B and I were both in the mood for burgers and when I saw that the beef was locally sourced from Boyden Farm here in VT, I was sold!

Before the burgers, we were given some deliciously warm rolls and we also ordered a few appetizers.  I had the House Cured Gravlax served with leek fritters and horseradish creme fresh…whoa!  This was delicious, but I just wish there was a bit more salmon.  B ordered his favorite New England Clam Chowder and this one didn’t disappoint.  It was rich and thick…perfect for the cold, rainy night.

KVI_RollsKVI_GravloxKVI_ChowderWell that was already a lot of food, but then the monstrous burgers arrived.  I, of course, can’t just get a regular burger.  No, I have to get all that’s coming to me.  Caramelized onions, sautéed mushrooms, bacon and swiss cheese.  OH YEAH.  Not only was the beef beyond delicious, but he bacon had a very distinct maple flavor that was to die for.  I sure hope that bacon is at breakfast in the morning!!  B wasn’t as adventurous as I and got a burger with cheddar and bacon…at least he got the bacon 🙂

KVI_BurgerI think this is definitely in my top 3 burgers of all time.  And if that wasn’t enough along with the hand cut fries, I decided to get a side of roasted cauliflower.  This was actually really good and was interestingly mixed with lemon and capers.  Unusual combo, but it really worked.

By the time we were finished with our meals, B and I were ready to roll ourselves out of there, but I had seen something on the dessert menu that really intrigued me and I had to give it a try…the Grown-up Root Beer Float.  How can you pass that up?!?  This float has Saranac Root Beer, local vanilla ice cream from Stafford Organic Creamery and it’s topped with Stoli Vanilla.  YES PLEASE!

KVI_Root Beer FloatThis was beyond amazing!  I can’t remember the last time I had a root beer float.  I felt like a kid again!  B went with chocolate and maple ice cream, also from Stafford Organic Creamery and topped it with caramel sauce.  I have to say, the maple ice cream was very good…one can only hope so when in Vermont 🙂

KVI_Ice CreamWe were both stuffed to the gills and somehow managed to make our way back up to the room.  I still have some serious digesting to do, but I’m fueled up for a fun filled day in the rain, playing with goats!  Stay tuned for that fun 🙂
